14 Oct 2021 - 02 Dec 2021

A reflection on the concept of value beyond its economic worth, understood as an evaluation of what can be considered good and fair in reference to production, distribution and consumption in the agri-food sector, with particular attention to a systemic and sustainable vision that puts producers, distributors, workers, restaurateurs and consumers together in a single “territorial scenario” and does not originate exclusively from a mere economic and financial calculation.

Are we really running on fumes?

  • Thursday 14 October 2021 at 18:30 - 19:30

Does the value of agri-food products correspond to the price at which we find them on the market? Fabio Ciconte reports on some of the main fruit supply chains in Italy, highlighting not only the deep crisis of a key sector of "Made in Italy” production often forced to unfair and vexatious market rules for producers, but also the urgency of countering climate change with devastating effects and the need to rethink the entire production and distribution system with a view to environmental, social and economic sustainability.

Human capital

  • Thursday 21 October 2021 at 18:30 - 19:30

In the aftermath of the Covid-19 emergency, many entrepreneurs have complained about the difficulty of finding staff in the tourism, hospitality and catering sectors. The causes are identified as often unfavourable working conditions with exploited and underpaid staff, but also with the lack of professionalism and lack of training for jobs considered "within everyone's reach and of little value". The catering crisis is a window into the crisis in the world of work that requires reflection on the value of performance, role recognition, remuneration, training, professionalism and human resources management in general.

The value of soil and biodiversity

  • Wednesday 10 November 2021 at 18:30 - 19:30

Soil has always been one of our most neglected and overlooked resources. Cultivated land has a value that not only depends on its geological morphology but also on how it is "treated". Protecting its biodiversity is the key to keeping its value high. When we discuss organic, biodynamic or conventional crops we almost always refer to the final product, forgetting that to correctly reflect on the cultivation systems to protect the environment and combat climate change we must actually focus on the life of the land itself.

Discussions on the price of good wine

  • Thursday 2 December 2021 at 18:30 - 19:30

Sandro Sangiorgi presents Paper#1 Discussions on the price of good wine. A reflection on the commercial value of wine, from the land to the glass, listening to those who deal with it at different stages. What are the factors that contribute to formulating the final price of wine? What makes a price fair? The land, grapes, production, technology and marketing all contribute to the sales cost to a certain extent and when it comes to quality and sustainability, a high price is not always synonymous with "value". Here more than anywhere else, value is found in the relationships between wine, environment, producer, consumer and much more...
