A reflection on the concept of value beyond its economic worth, understood as an evaluation of what can be considered good and fair in reference to production, distribution and consumption in the agri-food sector, with particular attention to a systemic and sustainable vision that puts producers, distributors, workers, restaurateurs and consumers together in a single “territorial scenario” and does not originate exclusively from a mere economic and financial calculation.

Soil has always been one of our most neglected and overlooked resources. Cultivated land has a value that not only depends on its geological morphology but also on how it is "treated". Protecting its biodiversity is the key to keeping its value high. When we discuss organic, biodynamic or conventional crops we almost always refer to the final product, forgetting that to correctly reflect on the cultivation systems to protect the environment and combat climate change we must actually focus on the life of the land itself.
